Not for us can the wine be "to an acceptable level" as is the case if the wine is bought in bulk and to price. In order to put quality first our suppliers produce far less wine per hectare than those who have been beaten down in price by a large conglomerate. We or our agents visit the vineyards and see the thinning of the leaves in July to facilitate better growth by exposing the grapes and the Green Harvest in late summer when the poorer grapes are discarded by hand. Our wines are produced and bottled on the estate, not in large co-ops or worse still brought to this country in containers and bottled here with chemical additives to ensure each batch tastes like the last. In rural France and Spain the locals don't suffer from splitting headaches the morning after too much wine in the same way as people do here. Not for us the serried ranks of predictable wines.
